Pihla’s Asian Oven Salmon
First wash your hands and make sure you have all ingredients at hand. Heat up the oven to 200°C.
Place the salmon on the chopping board, skin-side down, and wipe its surface with kitchen paper. Using a sharp knife, make quite deep cross cuts on the surface of the fish – to spice it up better. Place the fish in an oven casserole and wash your hands.
Take another chopping board and cut a few slices of the lemon, to garnish. Squeeze lemon juice all over the salmon. Open the cross cuts to make sure the lemon juice gets in the flesh. Sprinkle with soy sauce. Peel the ginger and chop it. Peel and chop the garlic as well. Rub spices on and inside the salmon and grind with pepper.
Place the casserole on the middle rack of the oven and cook for about 20 minutes – depending on how thick your fish is. Meanwhile, you’ve got enough time to clean the kitchen.
Cook potatoes or make mashed potatoes. Garnish the salmon with lemon wedges (and coriander if you feel like) and serve with potatoes.
