Surprisingly creative cocktail muffins make a perfect birthday party! Instead of icing, these juicy pear muffins are decorated with fruit cocktail sticks. Eating Aava’s Cocktail Muffins is as much fun as baking them!
Aava tells how she created this easy baking recipe: "I wanted to combine fruit and baking because I love ‘em both. These muffins are perfect for children’s birthday parties.”
Place the rack in the middle of the oven and heat up the oven to 200 °C, 180 °C for fan oven. Melt the butter in a pot or in the microwave and let it cool down.
Break eggs into a bowl. Add sugar and beat with electric mixer until semi-fluffy.
Add dry ingredients, milk and butter to egg-sugar mixture and beat with electric mixer until smooth. Add the chocolate chips and mix the dough with a big spoon.
Place the muffin tins in the muffin tray. Using two spoons, divide the dough in the tins and leave 1 cm of rising space for each muffin. Depending on the size of your tins, you’ll have 8 to 12 muffins.
Peel the pear and chop it into small cubes. Top the muffins with pear cubes and press them gently.
Bake the muffins in the middle rack of the oven for about 20 minutes until lightly golden.
Meanwhile, cut your favourite fruit or berries into suitably sized chunks. You can also use small baking moulds. Thread the chunks onto 25 cm long wooden skewers. Make as many cocktail sticks as you’ve got muffins.
Let the muffins cool down a bit before pressing the cocktail sticks in the middle of them. Enjoy!
